OK, there are times when spit roasting is
just not the best choice. Or perhaps you need to expand your fireplace cooking
repertoire. Either way, this piece of equipment fits the bill. Also know as a
Tuscan Grill, this incredibly practical piece of equipment has been used in
Europe for centuries. Although not quite as easy to use as
a fireplace rotisserie, it lands us on familiar ground - direct heat grilling. The fire has to
be burned down to the embers (you could use charcoal as well) before you
shove this thing over the heat and start cooking. It will get pretty hot in
there so our
fireplace gloves and a long set of BBQ tools are recommended as accessories.
