The thermometer is
probably the most important cooking tool that you never use.
Most
of us gauge temperature by feel, hunch, instinct, experience, sight-
anything but actually measuring the temperature with an accurate
thermometer! I used to do it too and I'm not sure why, but now I don't
hesitate to pull out a thermometer get readings on everything from my
fryng pan to my fire. It's maybe not as much fun as "winging it" by
guessing (or trusting things like stove dials or oven thermostats), but
my results are certainly better and more consistent by far.
I really helps to know exactly
what temperature you're cooking at, on, or in, what the temperature is
at inside the food, and don't forget about your cooler or freezer too.
They can disqualify you at cooking competitions if your cooler isn't
cold enough (not to mention the obvious health risks).
If you are serious about getting better and consistent results with
your cooking, a set of accurate thermometers is essential.
