A drip pan is recommended for most SpitJack cooking. Since fats and juices are rendered during cooking, something is needed properly collect and process them. For finishing touches (pan juices make a great sauces) or just to keep the hearth clean and safe, we suggest using a drip pan of some kind. It can also serve as an easy and safe way to bring the finished food to the kitchen or carving area.
An ordinary roasting pan or cookie sheet will work just fine but usually does not come with a handle for easy adjustment or mobility (the pan will be quite hot when in use).
Our custom copper drip pan is hand crafted from the premier cooking pan material. Copper has long been the choice of top chefs because of its quick and even heat conductivity. It includes a hand hammered finish, copper rivets, a tin lining (needed for safe cooking) and a 10" hand-wrought steel handle (long enough to stay cool while in use).
This pan is truly a great showpiece and nicely compliments the rustic elegance of either SpitJack model.
